Panera fans, this broccoli cheddar soup recipe is not only so easy to create at home, but tastes even better (and more comforting!) than the classic.

Ingredients

  • 4 tbsp.unsalted butter
  • 1 mediumyellow onion, finely chopped
  • 2stalks celery, thinly sliced
  • ¼ c.all-purpose flour
  • 3 c.low-sodium chicken broth
  • kosher salt
  • freshly ground black pepper
  • 1 largehead broccoli, finely chopped
  • 1 largecarrot, grated
  • 2 c.whole milk
  • 3 c.shredded cheddar, plus more for serving

Directions

    In a large pot over medium heat, melt butter. Add onion and celery and cook, stirring occasionally, until softened, 7 to 9 minutes.

    Whisk in flour and cook, stirring, until vegetables are coated, about 1 minute. Slowly pour in broth; season with salt and pepper.

    Stir in broccoli and carrots. Bring to a boil, then reduce heat to low. Simmer, stirring occasionally, until vegetables are tender, 8 to 12 minutes.

    Slowly add milk and bring to a simmer. Stir in cheddar until melted and smooth; season with salt and pepper.
