This TikTok Cheddar Bay Biscuit Chicken Cobbler went viral for a reason! Inspired by Red Lobster's classic biscuits, it's the ultimate flavor mashup.

Ingredients

  • 1/2 cup (1 stick) unsalted butter
  • 4 cups shredded rotisserie chicken
  • 2 cups milk
  • 1 box Red Lobster Cheddar Bay Biscuit Mix (including seasoning packet)
  • 1 bag frozen peas and carrots
  • 2 cups chicken stock
  • 1 can cream of chicken soup
  • 1 cup shredded cheddar cheese (optional)

Directions

  1. 1

Preheat your oven to 350°F. While the oven preheats, place the stick of butter in a 9x13-inch baking dish and let it melt in the oven. Keep an eye on it to ensure it doesn’t burn. Once melted, remove the dish from the oven and swirl the butter around to coat the bottom evenly.

  2. 2

In a medium mixing bowl, combine the milk, Cheddar Bay Biscuit Mix, and the seasoning packet that comes with it. Whisk until smooth and set aside.

  3. 3

Spread the shredded chicken evenly across the bottom of the buttered baking dish. Scatter the frozen peas and carrots evenly over the chicken. If using shredded cheddar cheese, sprinkle it evenly over the vegetables.

  4. 4

Pour the prepared biscuit batter evenly over the chicken and vegetable layer. Do not stir or mix the layers. This ensures the biscuit topping bakes properly.

  5. 5

In another bowl, whisk together the chicken stock and cream of chicken soup until smooth. Gently pour this mixture over the biscuit batter, ensuring an even distribution. Again, do not mix.

  6. 6

Place the dish in the oven, uncovered, and bake for 45 minutes. Check for doneness—the biscuit layer should be golden brown and set.

  7. 7

Once done, remove the casserole from the oven and let it sit for about 15 minutes. This allows the layers to set and makes serving easier. Serve warm and enjoy a hearty, cheesy twist on a chicken pot pie-inspired casserole!
