
Bring Disneyland home with this delicious copycat hand pie recipe!
Spilt dough into two portions. Chill in the refrigerator 3 hours. ONLY TAKE ONE PIECE OF DOUGH OUT OF THE REFRIGERATOR AT A TIME.
Roll each piece into a 12x15-inch rectangle. Cut each piece into SIX 3½ inch x 5 inch pieces. Line two cookies sheets with parchment paper; Set aside.
Place SIX 3½ x 5 inch pieces on one cookie sheet lined with parchment paper. Refrigerate 30 minutes. CONTINUE WITH REMAINING COOKE DOUGH.
Spread jam onto SIX cookie pieces. Dip fingertips in water and run them around the outer edge of the bottom layer. Place top cut pieces from the other dough rectangle over the top of the jam. Press edges with a fork, pierce tops of pies with a fork. Refrigerate 30 minutes. Preheat oven to 350°, bake 17-20 minutes.
Transfer to a cooling rack, cool completely before decorating. Makes 10 Pies
Pour pink and white candy and shortening into a medium microwave safe bowl, heat 1 minutes, and stir. If the candy it still chunky, heat an additional 30 seconds at 60%. Stir until creamy.
Pour melted candy into a squeeze bottle, make a line of melted candy around the perimeter of the pie, use the nozzle to fill in the center, and an offset spatula to smooth out the candy. NOTE: The squeeze bottle is optional. Using a spoon would work too.
Place in the refrigerator to harden (about 10 minutes).
Pour red and white candy with the shortening into a medium microwave safe bowl, heat 1 minutes, and stir. If the candy it still chunky, heat an additional 30 seconds at 60%. Stir until creamy.
Pour melted candy into a squeeze bottle. In a back and forth motion, decorate the top of the hand pie.
