Roasted Beets

Roasted Beets

Ingredients

  • 6 medium beets

    tops removed, scrubbed well

  • Extra-virgin olive oil

    for drizzling

  • Sea salt and freshly ground black pepper

Directions

  1. 1

    Preheat the oven to 400°F.

  2. 2

Place each beet on a piece of foil. Drizzle generously with olive oil and sprinkle with salt and pepper. Wrap the beets in the foil, place on a baking sheet, and roast for 35 to 60 minutes, or until fork-tender. The timing will depend on the size and freshness of the beets.

  3. 3

Remove the beets from the oven, remove the foil, and set aside to cool. When the beets are cool to the touch, peel off the skins. I like to hold them under running water and slide the skins off with my hands.

  4. 4

Cut or slice the beets and drizzle lightly with olive oil. Season to taste with salt and pepper, toss, and serve. Find more serving suggestions in the blog post above.

About this Recipe

Looking for the simplest, most delicious way to enjoy the vibrant goodness of beets? This roasted beets recipe unlocks their earthy sweetness with just a few pantry staples, transforming a humble root vegetable into an irresistibly tender and flavorful dish that’s perfect for any occasion. You'll love how effortlessly these beautiful beets come together.

Why does roasting work so well for beets? The dry heat of the oven caramelizes their natural sugars, concentrating their flavor and creating an incredibly tender interior. This method brings out the best in the beets, allowing their inherent deliciousness to shine through without the need for complex techniques or a long list of ingredients. It’s a testament to the power of simple cooking methods.

What can you expect from these roasted beets? You'll be rewarded with tender, subtly sweet, and wonderfully earthy bites. Drizzled simply with extra-virgin olive oil and seasoned with sea salt and freshly ground black pepper, the natural taste of the beets is enhanced, not masked. The exterior develops a slight textural contrast, while the inside remains soft and yielding, making each mouthful a true delight. Their vibrant color also adds a beautiful pop to any plate.

While delicious on their own, roasted beets are wonderfully adaptable to your preferences. Consider adding a sprinkle of fresh herbs like thyme or rosemary along with the olive oil for an aromatic touch, or a dash of garlic powder for a savory depth. For a hint of tang, a splash of balsamic vinegar can be drizzled over the cooked beets before serving. You can also experiment with different types of salt, like a flaky finishing salt, to add another layer of texture.

Enjoy these flavorful roasted beets warm as a vibrant side dish alongside your favorite main course. They are also excellent when tossed into fresh green salads, incorporated into grain bowls, or even pureed into a silky, comforting soup. Their robust flavor makes them a versatile and nutritious addition to many meals.
