Protein-packed and completely vegan, this super-healthy hummus bowl with roasted cauliflower and crispy chickpeas is a perfect example of how exciting it can be to eat good, nourishing food.

Ingredients

  • 1 (15 oz) can chickpeas, drained and rinsed
  • 1 Tbsp extra virgin olive oil
  • 1/4 tsp cumin
  • 1/4 tsp sea salt, plus more to taste
  • 1/4 tsp smoked paprika
  • 1/4 tsp cayenne pepper
  • freshly ground black pepper
  • 2 cups classic creamy hummus
  • 4 cups za'atar roasted cauliflower
  • 2 cups spicy roasted chickpeas
  • 1 1/2 cups micro greens
  • 1 large carrot, ribboned
  • 4 Tbsp fresh mint, roughly chopped
  • olive oil, for finishing
  • za'atar, to taste

Directions

    Preheat oven to 400° F

    Line a rimmed baking sheet with parchment paper.In a small bowl, mix together the chickpeas, olive oil, cumin, salt, paprika, cayenne and pepper, until evenly coated

    Spread the spiced chickpeas out so they are evenly spaced, onto prepared baking sheet

    Bake for 30 minutes and allow to cool.
