
Roasted sweet potatoes tossed in a flavorful blend of spices and herbs and baked to crispy perfection are a simple side dish sure to please everyone!
Preheat the oven to 425 degrees Fahrenheit. Line a baking sheet with parchment or foil. Set aside.
In a large bowl, whisk the oil, salt, cumin, smoked paprika, garlic powder, black pepper, and fresh herbs until well combined.
Scrub clean, peel (optional), and dice the potatoes into 1-inch chunks. Add them to the bowl and toss until all the cubes are well coated in the seasoned oil.
Arrange the seasoned sweet potatoes in a single layer on the baking sheet. Don’t overcrowd them—give each piece space to crisp up.
Roast in the preheated oven for 25-35 minutes, flipping every 10 minutes to ensure even browning. Roast until the edges are crispy and caramelized and the centers are tender.
Once roasted, remove the sweet potatoes from the oven. If desired, sprinkle chopped parsley or additional herbs over the top. Serve immediately, and enjoy!
