  • 2 cups sliced mushrooms (button, cremini, or a mix)
  • 1/4 cup all-purpose flour
  • 6 cups chicken broth
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • 1/2 cup heavy cream or half-and-half
  • 2 cups shredded rotisserie chicken
  • 1 cup chopped spinach or kale (optional)
  • Salt and pepper to taste
  • Fresh parsley or chives for garnish (optional)

    Heat olive oil or butter in a large pot over medium heat. Add the chopped onion and cook until translucent, about 3–4 minutes. Stir in the minced garlic and sauté for an additional 30 seconds.
