Sesame Chicken Meatballs

If you like the classic stir-fry, you'll love this meatball version!

Ingredients

  • Cooking spray
  • 1 lb. ground chicken
  • 1/3 c. chopped scallions, plus more for garnish
  • 1 large egg, beaten
  • 1/4 c. plain breadcrumbs
  • 1 1/2 tsp. garlic, finely chopped
  • 2 tsp. toasted sesame oil
  • 1 tbsp. low-sodium soy sauce
  • Freshly ground black pepper
  • 2 tsp. cornstarch
  • 1/4 c. chicken stock
  • 2 tbsp. low-sodium soy sauce
  • 1 1/2 tsp. garlic, chopped
  • 1 1/2 tsp. ginger, chopped
  • 1 tbsp. unseasoned rice vinegar
  • 1/4 c. pure honey
  • 1 tsp. toasted sesame oil
  • Cooked rice
  • Toasted sesame seeds, for garnish

     Preheat oven to 400°F. Lightly coat a sheet pan with cooking spray. Combine chicken, scallions, egg, breadcrumbs, garlic, sesame oil, and soy sauce in a bowl. Season with pepper. Form the mixture into 10 meatballs and place on prepared pan. Lightly grease meatballs with cooking spray. Bake until cooked through, 18 to 20 minutes.

    Meanwhile, make sauce: Whisk together cornstarch and 2 teaspoons water in a large saucepan. Whisk in stock, honey, soy sauce, garlic, ginger, vinegar, honey, and sesame oil. Cook over medium-low heat, whisking, until mixture bubbles and begins to thicken, 1 to 2 minutes. Remove from heat. Add meatballs and toss to coat. Serve over rice, garnished with scallions and sesame seeds.
