Customization & Variations
While flank steak is specified, you could experiment with other quick-cooking cuts like sirloin or skirt steak, adjusting cook times as needed. For the potatoes, feel free to swap baby potatoes for quartered Yukon Golds or red potatoes. To add more color and nutrients, consider tossing in sturdy vegetables like bell peppers or chopped onions alongside the potatoes before roasting. If fresh rosemary isn't available, dried rosemary can be used in a smaller quantity (about 1 teaspoon).
