Beat heavy whipping cream in a clean bowl using an electric mixer. Use the medium-high speed and beat until soft peaks form (2-3 minutes).
Slowly add in the powdered monkfruit and vanilla extract and beat until soft peaks remain. (an additional 2 minutes).
Refrigerate or use immediately.
