Preheat oven to 400 degrees and line a baking sheet with parchment paper, foil or coat with oil. Combine all ingredients except the teriyaki sauce using your hands or a rubber spatula.
Form the mixture into small balls (should make about 16-18) and place on the prepared baking sheet. Bake for about 15 minutes until fully cooked through. Larger meatballs (12 in quantity) will take closer to 20 minutes to bake.
Toss in teriyaki sauce and serve over rice. Top with sesame seeds and scallions. I also sauté some zucchini while the meatballs bake for a veggie side! Roasted broccoli is great too.
