
This is a super easy and delicious sheet pan meal that can easily be prepped ahead of time! Serve over white rice.
First, chop all the veggies. Chop the onions and peppers into about the same size. Roughly chop broccoli leaving them in decent sized pieces.
Chop the chicken into cubes.
Spray a large sheet pan with cooking spray. Add all the veggies to a large bowl and drizzle it with a little bit of oil. Season to your liking with some salt, pepper, garlic powder, and smoked paprika. Stir veggies until they are well coated in oil and seasonings. Pour the veggies onto a large sheet pan sprayed with cooking spray and slide them to one side of the pan.
Add the chicken to the bowl and with the same seasonings you used on the veggies. Add a little bit of the Teriyaki sauce and stir until well coated in seasoning and sauce. I used just enough Teriyaki sauce to coat the chicken.
Add the chicken to the other side of the sheet pan. Bake at 400 degrees F for 20-25 minutes. Once the chicken is cooked pour off any extra liquid and broil for a few minutes if desired.
Stir chicken and veggies together and top with a little bit more of the Teriyaki sauce if desired and the chopped green onions.
Serve as is or over some rice. This meal is good with white rice or some microwavable fried rice. Enjoy!
