- 1 medium yellow or white onion
diced
- 2 pounds ground chuck
or beef chuck, cut into 1/2-inch cubes
- 2 tablespoons diced garlic
- 1 tablespoon Italian seasoning blend
- 2 teaspoons chili powder
- 1 tablespoon smoked paprika
Spanish paprika
- 1 1/2 teaspoons ground cumin seeds
- 1 tablespoon brown sugar
- 1 tablespoon vinegar
- 2 cans crushed tomatoes

- 2 cans red kidney beans
drained, 15 ounce
- 1/8 teaspoon black pepper
- 2 teaspoons kosher salt
- 1/4 cup jalapenos
sliced and seeded
- 1/8 teaspoon crushed red pepper flakes
- 2 tablespoons masa harina
or corn tortilla flour
- optional toppings: sour cream
shredded cheddar cheese, tortilla chips, avocado slices, etc.

Warm the oil in a Dutch oven or large, heavy-bottomed pot over medium heat. Add the onion and cook for 3-5 minutes until soft, stirring frequently. Add the garlic and ground beef and cook until the meat is browned, breaking it apart with a wooden spoon.

Reduce the heat to medium-low and add the Italian seasonings, chili powder, smoked paprika, cumin, brown sugar, vinegar, tomatoes, beans, black pepper, salt, diced jalapenos, and red pepper flakes. Mix well.
