Place the entire package of Oreos (creme filling and all!) in a food processor. Pulse until you have fine, even crumbs. No big chunks! If you don’t have a food processor, you can place the cookies in a large ziplock bag and crush them with a rolling pin.
In a large mixing bowl, combine the Oreo crumbs with the softened cream cheese. Use a hand mixer or your hands to mix until it’s completely combined and forms a thick, uniform dough.
Use a small cookie scoop or a tablespoon to portion out the mixture. Roll each portion between your palms to form a smooth, one-inch ball. Place the rolled balls on a baking sheet lined with parchment paper. Once all balls are rolled, pop the tray in the freezer for at least 15-20 minutes.
While the balls are chilling, melt the almond bark or candy melts according to package directions in a microwave-safe bowl.
Remove a few balls from the freezer at a time. Use a fork or a dipping tool to submerge each ball in the melted coating, letting the excess drip back into the bowl. Place the dipped ball back onto the parchment paper and immediately add your Christmas sprinkles before the coating sets.
Allow the coating to set completely at room temperature. This usually takes about 30 minutes. You can speed this up by placing them in the fridge. Once set, arrange them on a platter and serve.
