Combine your ground pork, scallions, lots of grated garlic and ginger, a few tablespoons of soy sauce, toasted sesame oil, as much chili crisp as you like, a splash of rice vinegar and white pepper (or black pepper if you don't have white pepper).
Give that a gentle mix with your hands and then set aside.
Grab a small baking dish or individual ramekins.
Dip your wonton wrappers quickly in water, then layer it into the bottom of the dish.
Spread a thin layer of the pork mixture on top.
Repeat wrappers pork wrappers pork until you run out of space or ingredients.
Finish with a layer of the wrappers.
Pour about a tablespoon or two of chicken broth or water over the top to keep everything nice and juicy.
Carefully transfer it to a steamer, cover, and steam that for about 25 minutes.
Drizzle with more soy sauce, chili crisp, scallions, and sesame seeds.
