Ingredients

  • 3 centimeters fresh ginger
  • 2 garlic cloves
  • 1 sprig Lemongrass
  • 1 chicken
  • 1 Star anise
  • 0.5 Cinnamon stick
  • salt
  • 250 grams soybean sprout
  • light soy sauce
  • Fish sauce
  • Rice wine vinegar
  • 0.5 bunch Thai basil

Directions

    Peel and slice ginger, garlic and lemongrass.

    Rinse chicken and combine with ginger, garlic and lemongrass in a pot. Add enough water to cover everything and bring to a boil. Simmer on medium heat for about 1 hour, skimming all foam. Add spices and season with salt 20 minutes before the end of cooking.

    Remove fully cooked chicken from broth and let cool. Strain broth through a sieve and measure 800 ml (approximately 3 1/2 cup) into a pot and heat through.

    Remove skin from chicken, loosen meat from bones and cut into strips.

    Rinse bean sprouts and add to the broth. Return chicken meat to the broth. Simmer for 5 minutes and season with soy sauce, fish sauce and rice wine vinegar. Pour into bowls and sprinkle with Thai basil leaves. Serve.
