Directions

    Start by preparing the dough. In a Pyrex glass, mix 1 tsp (4 g) granulated sugar, 2 tsp (6 g) active dry yeast, and ½ cup (130 ml) warm milk. Let this mixture sit for 10-15 minutes, and it should become foamy on top.

    In a stand mixer bowl, pour the yeast mixture, 2 eggs, 3 tbsp (38 g) granulated sugar, 1 ½ cups + 1 tbsp (315 g) all-purpose flour, 1/2 tsp (2.5 g) pure vanilla bean paste, and ¾ tsp (4.5 g) salt.

    Using the dough hook attachment, knead the dough on medium-low speed for 15 minutes. Add slightly under ¼ cup (50 g) unsalted room temperature butter and knead for 10 more minutes. Place the dough in a clean and slightly oiled bowl and cover it with plastic wrap. Let it proof in a warm environment for 1 hour and 30 minutes to 2 hours, or until it doubles in size.

    While the dough is proofing, prepare the cream cheese frosting. In a mixing bowl, work ¼ cup (4 tbsp – 57g) room temperature, unsalted butter. Add 2 cups (230 g) of powdered sugar and mix it until it’s all incorporated. Add 1 tbsp (15 ml) pure vanilla bean paste and ¼ tsp salt and mix. Finally, add 1 1/3 cups (300 g) of room temperature cream cheese and combine until fully incorporated, cover in plastic wrap, and refrigerate until we need it.

    Once the dough has proofed, roll it out on a lightly floured surface. Spread ¼ cup (4 tbsp – 57 g) unsalted room temperature butter, sprinkle over 6 tbsp (76 g) granulated sugar and ½ cup (85 g) birthday sprinkles, press them over the dough. Cut the dough into 6 equal-sized strips and roll each one. Place them on a parchment paper-lined rectangular oven-safe dish, cover with plastic wrap, and let them proof for 45 minutes.

    Preheat the oven to 355F (180 °C). Add 1 tbsp of heavy whipping cream on top of each roll and bake them for 20-25 minutes.

    Once the rolls come out of the oven, top them with the cream cheese frosting we prepared earlier and more sprinkles.
