
Blueberry Lemon Loaf
Ingredients
- ⅓ cbutter
- 1 csugar
- 2eggs
- 3 tbsplemon juice
- ½ cmilk
- 1 tspbaking powder
- 1 ½ cflour
- 1 tbsplemon peel
- ½ tspsalt
- 1 coverflowing blueberries
- Optional Lemon Topping After Baking
- ¼ csugar
- 2 tbsplemon juice

Heavily grease a loaf pan and I would also use nonstick and flour.

Heat oven to 350 degrees.

In a large bowl using an electric mixer, beat the sugar and butter together for a few minutes.

Add the eggs, lemon juice till blended.

Add the flour a little at a time, then stir in the salt, baking powder, and peel to this wet mixture until blended.

Fold in the blueberries.

Bake for 1 hour or until the middle is the firm using the toothpick method.

Cool 3 or 4 minutes and invert onto a cooling rack or wax paper before adding lemon/sugar glaze topping.

Optional Topping Instructions:

The sugar glaze adds an extra lemony flavor by mixing 1/4 cup sugar and 2 tablespoons freshly squeezed lemon juice mixed together and pour over a warm loaf.

Alternate topping garnish:

dust with powdered sugar or use a mixture of lemon juice, powdered sugar, and lemon zest for a thin glaze on top
