
Buffalo Cauliflower Bites
Ingredients
- ¾ csour cream
- 2 tsplemon juice
- ¼ tspkosher salt
- ¼ tsppepper
- ½ tspbuffalo wing sauce

- 1 largescallion
- 1 ½ ozcrumbled blue cheese
plus more for topping, 1/3 cup
- ⅓ cbuffalo wing sauce

- 1 tbspcanola oil
- ½ tsphoney
- ½ crice flour
- ¼ ccornstarch
- ¼ tspbaking powder
- ¼ tspkosher salt
- ½ cplus 2 tablespoons cold seltzer
- 12-pound head cauliflower
- Canola oil
for brushing
- Cucumber spears and/or celery sticks
for serving

Make dip: In bowl, combine all ingredients; refrigerate until ready to use.

Make buffalo sauce: In large bowl, whisk together all ingredients; set aside.

Make cauliflower: Heat air fryer to 400°F. In another large bowl, whisk together rice flour, cornstarch, baking powder, and salt. Whisk in seltzer. Add cauliflower and toss to coat.

Brush air fryer basket with oil. Working in 2 batches, add cauliflower and cook, shaking basket after 10 minutes, until crispy, 15 minutes total. Transfer to plate. When second batch is done, leave in basket and top with first batch of cauliflower; cook 2 minutes to reheat.

Transfer cauliflower to buffalo sauce and toss to coat. Serve immediately with dip, cucumbers, celery, and extra blue cheese if desired. <br/>
