Carolina BBQ Sauce Recipe
Complementing the vinegar tang is a good balance of peppery flavors and a hint of sweetness from brown sugar and a bit of ketchup, which is what sets this region's barbecue apart from the rest of the state.

About this Recipe
Craving the unmistakable tang and savory spice that defines authentic Carolina barbecue? This Carolina BBQ Sauce, often called Lexington Dip by those in the know, is the secret weapon behind the legendary pulled pork of Western North Carolina. Get ready to elevate your BBQ game with this essential finishing sauce.
What makes this vinegar based sauce truly shine is its exceptional balance. Unlike overly sweet or thick sauces, this no-cook recipe masterfully blends the bright acidity of white and apple cider vinegars with a thoughtful kick of peppery flavors. A subtle touch of brown sugar and a hint of ketchup provide just enough sweetness to round out the sharp tang, creating a symphony of flavors that is uniquely Carolina.
When you taste this Carolina BBQ Sauce, expect a vibrant, thin liquid that saturates and flavors meat without overwhelming it. The initial tang from the vinegars is quickly followed by a pleasant warmth from the black pepper and red pepper flakes, all harmonized by a faint, inviting sweetness. It’s designed to cut through the richness of slow-cooked pork, adding layers of complexity and moisture. This is a finishing sauce that celebrates the meat, rather than masking it.
Customizing your "Dip" is simple. Feel free to adjust the hot sauce to your preferred spice level; a milder sauce works for a family-friendly version, while a spicier one adds extra punch. You can also play with the balance of red pepper flakes and black pepper to fine-tune the peppery notes, though the provided ratios are a fantastic starting point for that authentic taste.
This sauce is the quintessential companion for pulled pork, making any gathering feel like a true Southern barbecue. Simply drizzle generously over your freshly shredded pork for that authentic taste of the Old North State.
