Directions

    Preheat oven to 350°F. Lightly coat a 9- x13-inch baking dish with cooking spray. Stir together biscuit mix and seasoning packet with water in a medium bowl. Spread into baking dish. Bake in preheated oven until just starting to turn golden brown, 10 to 12 minutes. Remove from oven and set aside.

    Meanwhile, heat oil in a large skillet over medium-high. Add beef in large chunks and cook, undisturbed, until well browned on first side, about 3 minutes. Stir and continue to cook, stirring occasionally, until almost cooked through but some pink remains, about 5 more minutes.

    Add onion and poblano and cook, stirring occasionally and breaking beef into small pieces, until beef is cooked through and onions are starting to soften, about 3 more minutes. Add taco seasoning and salt and stir to combine. Remove from heat.

    Stir together mayonnaise, sour cream, and smoked paprika in a medium bowl. Stir in 1 cup of the pepper Jack and 1 cup of the Cheddar.

    Spoon beef mixture evenly over par-cooked biscuit in baking pan.
