This cattle drive casserole is my new favorite dinner recipe. It's a hearty casserole filled with savory ground beef, all the Tex-Mex flavors from the spice mix, and layers of cheesy goodness. To make that even better, the cheddar bay biscuit base adds an extra layer of  texture and flavor to elevate this beyond your typical casserole.

Ingredients

  • Cheddar Bay biscuit mix
    1 box
  • milk
    ¾ c
  • lean ground beef
    1 ½ lb
  • onion
    1 large
  • water
    ¼ c
  • taco seasoning
    1 packet
  • tomatoes
    1 can
  • Colby jack cheese
    1 c
  • mayonnaise
    ½ c
  • sour cream
    ½ c
  • cheddar cheese
    1 ½ c
  • green onion
    2 tbsp

Directions

    1. Preheat your oven to 350°F (175°C) and prepare a 9 x 13-inch casserole dish by spraying it with non-stick cooking spray.

    2. In a mixing bowl, combine the biscuit mix, the enclosed seasoning packet, and milk until well combined.

    3. Spread this mixture evenly in the casserole dish and bake for 5 minutes to slightly set.

    4. While the biscuit base is baking, brown the ground beef in a large skillet with the onion over medium heat, breaking it up as it cooks.
