    Preheat oven to 350°F with a rack 7 inches from heat source (center position). Coat a 13- x 9-inch baking dish with cooking spray; set aside.

    Whisk together cream of chicken soup, chicken broth, rice, milk, parsley, onion soup mix, mustard, salt, pepper, and 1 cup of the cheese in a large bowl. Transfer into prepared baking dish. Nestle chicken evenly in rice mixture (it’s okay if chicken overlaps slightly).

    Cover baking dish with aluminum foil. Bake in preheated oven until rice is cooked through and a thermometer inserted into thickest portion of chicken registers 165°F, about 1 hour.

    Remove baking dish from oven and discard foil; gently stir to combine the rice and sauce. Sprinkle remaining 1 cup cheese evenly over the top.

    Increase oven temperature to Broil. Broil until cheese is melted and lightly browned, about 5 minutes. Let sit for 20 minutes. Garnish with additional parsley before serving.
