Cherries Jubilee

Cherries jubilee feels special, but it isn’t fussy. The warm cherries, paired with the cool creamy ice cream, make for a dessert with a flair.

Ingredients

  • granulated sugar
    ½ c
  • orange zest

    plus 1/4 cup fresh juice, from 1 medium orange

    1 tsp
  • fresh lemon juice

    from 1 small lemon

    2 tsp
  • vanilla extract
    1 tsp
  • cup

    plus 1 Tbsp. tap water, divided

    ¼
  • fresh sweet cherries

    pitted

    1 lb
  • kosher salt
    ⅛ tsp
  • bourbon
    3 tbsp
  • cornstarch
    1 tsp
  • Vanilla ice cream

    for serving

Directions

    Stir together sugar, orange zest and juice, lemon juice, vanilla, and 1/4 cup of the water in a large stainless steel skillet. Cook over medium-high, stirring often, until simmering and sugar is dissolved, about 1 minute.

    Add cherries and salt; cover and cook until cherries release juices, about 2 minutes. Uncover and continue to cook, stirring occasionally, until cherries begin to soften, about 3 minutes.

    Remove from heat and add bourbon; return to heat and cook over medium, swirling pan frequently and spooning sugar mixture over cherries, until raw alcohol aroma mostly dissipates and cherries are soft, about 3 minutes.

    Stir together cornstarch and remaining 1 tablespoon water in a small bowl until combined; add to cherry mixture, and continue cooking until sauce thickens, stirring often, about 1 minute. Remove from heat and let cool for 5 minutes. Serve with vanilla ice cream.
