
Cherry Clafoutis Recipe
Ingredients
- 1 ½ cfresh sweet cherries
pitted
- 3 largeeggs
room temperature
- ½ call-purpose flour
- ½ cgranulated sugar
plus 2 tablespoons for topping
- 1 cwhole milk
or half and half
- 1 ½ tspvanilla extract
- ½ tspalmond extract
- ¼ tspsalt
- Powdered sugar
for dusting on top

Preheat your oven to 350 degrees F. Generously butter the bottom of a 9 or 10-inch baking dish or pie plate to prevent sticking and add flavor.

Evenly distribute the pitted cherries around the bottom of the prepared baking dish, ensuring each bite will have fruit.

In a blender, combine the eggs, granulated sugar (reserving 2 tablespoons for topping), milk, flour, vanilla and almond extracts, and salt. Blend until the batter is smooth and well mixed.

Pour the blended batter over the cherries in the dish, then sprinkle the reserved 2 tablespoons of sugar evenly on top to create a delicate crust.

Bake the clafoutis for 35 to 45 minutes, or until the custard is set and lightly golden on top. Avoid overbaking to maintain a tender texture.

Allow the clafoutis to cool for at least 15 minutes. Dust with powdered sugar before serving. Enjoy warm, at room temperature, or cold, according to preference.
