Ingredients
- ½ cunsweetened cocoa powder
- ¾ cgranulated sugar
- ¼ clight olive oil or avocado oil
- 2eggs
- 1 tspvanilla extract
- 1 tspbaking powder
- ¼ tspsalt
- 1 call-purpose flour
- 2 tbspgranulated sugar
- ⅓ cpowdered sugar
confectioners sugar
Directions
- 1
Preheat the oven to 350°F and line a baking sheet with parchment paper. Place the granulated sugar and powdered sugar into two separate shallow bowls for coating the cookies later.
- 2
In a large bowl, mix the unsweetened cocoa powder, granulated sugar, and olive or avocado oil thoroughly with a wooden spoon until well combined.
- 3
Add the eggs and vanilla extract to the cocoa mixture. Stir gently until just combined to keep the batter light and airy.
- 4
Sprinkle the salt, baking powder, and flour over the wet ingredients. Mix well until a stiff dough forms, ensuring everything is evenly incorporated.
- 5
Using a cookie dough scoop, form 1 1/2-inch balls. If the dough sticks, chill it for about 30 minutes before rolling to make handling easier.
- 6
Roll each dough ball first in a thin layer of granulated sugar, then generously coat with the powdered sugar to create the distinctive crinkle topping.
- 7
Arrange the coated dough balls on the prepared baking sheet about 2 inches apart. Bake for approximately 10 minutes, until the tops crackle and edges are set but centers remain soft.
- 8
Let the cookies cool on the baking sheet for 5 to 10 minutes. This allows them to firm up as they cool without breaking apart.
- 9
Move the cookies to a wire rack to cool completely before storing or serving.
- 10
Store cookies at room temperature in an airtight container for up to one week, or freeze in a single layer in an airtight container or bag for up to three months for longer preservation.
