About this Recipe
Craving that hearty, savory Zuppa Toscana from Olive Garden™ but don't want to leave the house? This copycat recipe brings all the warmth and flavor right to your kitchen, offering a delicious homemade version that comes together surprisingly quickly.
This recipe truly captures the essence of Olive Garden's favorite soup by expertly combining spicy ground hot sausage, tender russet potatoes, and fresh, vibrant kale. The balance of a savory chicken broth base with a generous cup of heavy cream creates a rich, comforting, and deeply satisfying bowl that tastes just like the restaurant classic.
Prepare for a truly satisfying bowl of soup where every spoonful is a journey of textures and flavors. You'll find the robust, spicy kick of the sausage perfectly complemented by the creamy, earthy potatoes. The fresh kale adds a touch of welcome bitterness and vibrant color, all swimming in a velvety, indulgent broth. It's a robust entree designed to warm you from the inside out, making it a perfect meal for a cozy evening.
While this recipe nails that signature Zuppa Toscana taste, it's also incredibly forgiving for home cooks. If you prefer less heat, swap the hot ground sausage for a mild Italian sausage. For a slightly different potato texture, consider using Yukon Gold potatoes in place of russets. You can also adjust the amount of kale to your liking, adding more for extra greens.
This comforting Zuppa Toscana is a fantastic entree on its own, perfect for a cozy family dinner or a casual gathering. Serve it alongside some warm, crusty bread or garlic breadsticks to complete that classic soup and bread experience.
