
Crockpot Swamp Potatoes
Ingredients
- 2 lbbaby potatoes
- 14 ozandouille sausage
- 1 lbfresh green beans
- 1 mediumyellow onion
- 4 clovegarlic
- 4 tbspunsalted butter
- 2 tbspolive oil
- ½ clow-sodium chicken broth
- 1 ½ tspsmoked paprika
- 1 tspgarlic powder
- 1 tsponion powder
- ½ tspthyme
- ½ tsporegano
- ½ tspblack pepper
- ¼ tspcayenne pepper
- 1 tspsalt
- 1 ½ csharp cheddar cheese
- 4 ozcream cheese

In a small bowl, mix all Cajun seasoning ingredients. Place potatoes in the slow cooker, drizzle with olive oil, and toss with half the seasoning.

Add diced onion and garlic over potatoes. Layer sausage on top, then add green beans. Sprinkle remaining seasoning, pour in broth, and distribute butter pieces.

Cover and cook on LOW for 6 to 7 hours or HIGH for 3 to 4 hours until potatoes are tender. Avoid opening lid during cooking.

With 30 minutes left, add cream cheese and shredded cheddar on top. Cover and let melt without stirring.

Once melted, gently stir to combine into a creamy sauce. Taste and adjust seasoning if needed.

Serve hot as a main dish or side. Garnish if desired and enjoy.
