Ingredients

  • Eggs

    boiled and peeled

  • medium-sized red potatoes

    we didn't peel them; it’s your choice if you want to or not

  • 3/4th cup of chopped onion

    we used Vidalia

  • celery diced
    1 c
  • mayonnaise
    1 c
  • sweet pickle relish
    ⅓ c
  • yellow mustard
    ¼ c
  • smoked paprika
    1 tsp
  • salt
    1 tsp
  • black pepper
    ½ tsp
  • white granulated sugar
    1 tbsp

Directions

    Boil eggs, peel and chop. Cover the potatoes with water and boil for about 25 minutes or until soft when stuck with a fork. Remove from water and let cool completely.

    In a large bowl, cut potatoes into chunks and add the remaining ingredients. Toss and refrigerate for several hours.
