This easy Broccoli Cheese Rice is a creamy, cheesy side dish made with tender white rice, fresh broccoli, cheddar cheese, and a splash of heavy cream. Everything cooks in one pot for a simple side dish that pairs well with chicken, beef, or pork.

Directions

    Add 2 cups chicken or vegetable broth, 1 tablespoon olive oil, 1/2 teaspoon garlic powder, 1/4 teaspoon onion powder, and 1/4 teaspoon salt to a medium saucepan with a tight-fitting lid. Bring to a boil over medium-high heat.

    Stir in 1 cup rinsed white rice. Allow the mixture to return to a boil, then cover with the lid and reduce the heat to low.

    Simmer, covered, for 15 minutes, or until the rice is tender and the liquid has been absorbed.

    Turn off the heat. Working quickly so you don't lose too much steam, remove the lid and scatter 2 cups finely chopped broccoli florets over the rice. Replace the lid and let the pot sit off the heat for 5 minutes, or until the broccoli is steamed to your liking.

    Stir the broccoli into the rice, then add 3/4 cup heavy cream and 1 cup shredded cheddar cheese. Stir until the cheese is completely melted and the rice is creamy.
