Easy Chicken Fried Rice

Chicken Fried Rice is easy to make at home and so good! This is one of my favorite griddle recipes.

Ingredients

  • long grain white rice

    cooked and cooled

    2 c
  • chicken breast
    1 lb
  • slices of bacon

    chopped

    6
  • sesame oil
    2 tbsp
  • bag frozen mixed veggies
    12 oz
  • salt

    pepper, garlic powder

  • eggs
    4
  • low sodium soy sauce
    1 tbsp
  • chopped green onions
    4
  • buffalo wild wings sweet & sour sauce

Directions

  1. 1

Cook 2 cups of long grain white rice following the directions on the package. Let cool and place in the refrigerator for at least a couple of hours. You can also do this step the night before you plan on making it.

  2. 2

Cut chicken into small pieces and chop 6 pieces of uncooked bacon.

  3. 3

Heat a griddle to about medium heat and add 1 tbsp of sesame oil to the griddle. Add the chicken and chopped bacon. Season the chicken with some salt, pepper, and garlic powder. Let cook and stir everything around.

  4. 4

Once the bacon is cooked, scoot the bacon over on the griddle and add the cooked rice on top of where you cooked the bacon. Add a little more sesame oil and season with salt, pepper, and garlic powder. Add some soy sauce to the rice. I probably used about 1 tbsp of soy sauce, but you can add as much as you’d like.

  5. 5

Next, add the bag of frozen veggies next to the rice.

  6. 6

Stir the rice and bacon together well. Next, make a well in the middle of the rice and add a little bit more oil and add 4 eggs. Stir to scramble them and let them cook until they are done to your liking.

  7. 7

Mix in the chicken and veggies. Spread the rice out on the griddle and let cook until the rice is golden brown and fried.

  8. 8

Top with chopped green onions and your favorite sauce. I really like this with Sweet and Sour sauce! Enjoy!

About this Recipe

Craving a dinner that's both comforting and packed with flavor? This Easy Chicken Fried Rice is a fantastic griddle recipe that brings restaurant-quality taste right to your kitchen. It's a satisfying meal that's perfect for weeknights, delivering authentic flavors with ingredients you can find at any grocery store. The secret to its incredible depth of flavor lies in the crispy bacon, which renders its fat to cook the chicken and vegetables. This infuses every bite with a subtle, smoky richness that sets it apart. Using pre-cooked and cooled long grain white rice is crucial for that ideal, non-soggy texture, allowing the grains to crisp up beautifully on the griddle. You can expect a wonderfully balanced dish, with tender chicken and fluffy rice mingling with crisp-tender mixed vegetables. The savory notes from the bacon and soy sauce are perfectly complemented by the tangy sweetness of the Buffalo Wild Wings Sweet & Sour Sauce, all brought together with delicate ribbons of scrambled egg and a fresh bite from chopped green onions. It’s a hearty dish that feels both familiar and exciting with every forkful. While chicken and bacon make a fantastic pairing, you can easily adapt this fried rice to your liking. Feel free to swap the chicken for shrimp or tofu, or increase the amount of frozen mixed veggies for an even more vibrant dish. If you don't have Buffalo Wild Wings Sweet & Sour Sauce on hand, a similar sweet and sour sauce from your pantry will work, or you can even experiment with a touch more soy sauce and a dash of rice vinegar. This hearty fried rice makes for a satisfying dinner on its own, perfect for a busy evening when you're craving something comforting and flavorful.
