Easy Sheet-Pan Beef Kebabs

for the kebabs:
– 2 lb ground beef (85/15)
– ¼ cup parsley, finely chopped
– zest of ½ lemon
– 2 tsp onion powder
– 1½ tsp garlic powder
– 1½ tsp kosher salt
– ¾ tsp black pepper
– 2 tsp cumin
– 2 tsp smoked paprika
– 1 tsp coriander
– ¼ tsp cinnamon
– 2 tbsp olive oil @smashkitchen
– ½ tsp honey or date syrup (optional)
how:
1. oven 400°F. mix everything gently until just combined.
2. press onto a sheet pan (about 3/4” thick).
3. score into kebabs
4. bake about 12-14 min until just cooked. spoon off excess fat.
5. broil 2–3 min until browned.
quick yogurt sauce (not tzatziki):
– ¾ cup greek yogurt
– juice of ½ lemon
– 1 tbsp olive oil
– 1 tsp honey
– salt + pepper
– 1½–2 tbsp finely chopped dill
(optional parsley)
mix it up. done.
pita build:
yogurt sauce → beef → tomato + cucumber (pinch salt + olive oil) → pickled red onion → chili oil

For the Kebabs

Preheat oven to 400°F.

Gently mix the ground beef, parsley, lemon zest, onion powder, garlic powder, kosher salt, black pepper, cumin, smoked paprika, coriander, cinnamon, olive oil, and optional honey or date syrup until just combined.

Press the mixture onto a sheet pan, about ¾ inch thick.
