About this Recipe
What Makes Ginny's Chicken Special
Looking for an elegant main course that feels restaurant-worthy but comes together with minimal fuss? Ginny's Chicken transforms simple chicken cutlets into a show-stopping dinner by layering them with steamed asparagus, melted cheese, and savory gravy, then finishing with a golden breadcrumb topping. It's the kind of dish that impresses dinner guests while being forgiving enough for a weeknight.
The genius of this recipe lies in its assembly-style approach. Thin chicken cutlets cook quickly and evenly, while the asparagus adds a fresh, elegant touch without requiring any complex prep beyond steaming. The double cheese layer—creamy American cheese paired with nutty Parmesan—creates richness that complements the chicken's mild flavor, and the jarred gravy ties everything together with minimal effort. Topped with buttery, seasoned breadcrumbs, you get that satisfying textural contrast between the crispy top and tender layers beneath.
What you'll taste is comfort food with a touch of sophistication: juicy chicken cutlets surrounded by tender-crisp asparagus spears, all enveloped in a garlicky, cheesy gravy with a golden, crunchy crown. The garlic—three full tablespoons—infuses every layer with aromatic depth, while the Parmesan adds a pleasant sharpness that keeps the dish from feeling too heavy.
Customization is built right in. If asparagus isn't your favorite or isn't in season, try steamed green beans or broccoli florets. Not a fan of American cheese? Swap it for provolone, Swiss, or even mozzarella for a different flavor profile. The seasoned breadcrumbs do most of the work on flavor, but you can toast them in the butter for even more depth before sprinkling on top.
This dish shines as a centerpiece for special occasions—think Mother's Day brunch, Easter dinner, or date night at home—but it's simple enough to become a regular rotation meal once you've made it a time or two. Serve it alongside roasted potatoes or a crisp green salad to round out the plate, and watch it disappear.
