Ingredients
- 1 ¾ cbuttermilk
- 1 largeegg
- 4 ¼ call-purpose flour
plus more for dusting
- 3 tbspgranulated sugar
- 1 tspbaking soda
- 1 tspsalt
- 5 tbspunsalted butter
- optional: 1 cup raisins

Preheat oven to 400°F (204°C). Prepare your baking sheet or pan.

Whisk buttermilk and egg (if using). In a separate bowl, whisk flour, sugar, baking soda, and salt. Cut in cold butter. Stir in raisins (if using). Pour in buttermilk mixture and gently fold until combined.

Transfer dough to prepared pan. Score the top with a slash or X.

Bake for 45-55 minutes, or until golden brown. Tent with foil if browning too quickly. Bread is done when an instant-read thermometer reads 195°F (90°C).

Remove from oven and cool for 10 minutes before transferring to a wire rack.

Serve warm or at room temperature. Store leftovers covered at room temperature for up to 2 days or in the refrigerator for up to 1 week.
