Ingredients

- 1 tbspchili powder
- 1 tbspground cumin
- 3tsps ground coriander
- 3tsps smoked paprika
- 2tsps dried oregano
- ¼ tspsea salt (or
- 2beefsteak tomatoes
chopped
- 1 mediumhead of cauliflower)
riced (or 1 bag cauliflower rice
- 1 tbspolive oil or avocado oil
- 1sweet onion
diced small
- 3 clovegarlic minced
- 1 tspcumin
- ¼ tspsea salt (or
- ¼ tspground pepper (or
- juice and zest of 1 fresh lemon or lime
- a handful of fresh cilantro
chopped
- thin-sliced crisp lettuce or cabbage
Directions
To make the turkey:

Heat oil in a large skillet over medium heat. Sautee onion and garlic for 2-3 minutes. Stir in the ground turkey and cook, mincing the meat with a wooden spoon. Once the meat is no longer pink, stir in all the seasonings.

Continue to cook until it begins to brown. Add chopped tomatoes and cook until liquid is absorbed, about 3 minutes more.
To make the cauliflower rice:
