About this Recipe

The Ultimate Comfort: Ree Drummond's Hearty Hamburger Soup

When the temperatures drop, there's nothing quite as satisfying as a big bowl of comforting soup. And if you're searching for an easy weeknight dinner that's packed with flavor, look no further than Ree Drummond's Hamburger Soup recipe. This isn't just any soup; it's a robust, incredibly satisfying meal loaded with savory ground beef, tender potatoes, and a colorful medley of vegetables all simmered in a rich, deeply flavored tomato broth.

This classic hamburger soup is a true one-pot wonder, making it perfect for busy evenings or feeding a crowd at a potluck. What makes Ree's version stand out is the generous amount of ground chuck, browned to perfection, and the vibrant array of bell peppers, carrots, and celery, which add both nutrition and incredible texture. The chunky red potatoes make it extra hearty, turning a simple soup into a complete, filling meal.

Tips for Making the Best Hamburger Soup

Achieving that deep, savory flavor is key to a stand-out ground beef soup.

  • Brown the Beef Right: Don't rush this step! Properly browning the ground chuck creates a rich base. Drain any excess fat before adding your aromatics.
  • Layering Flavors: Sautéing the diced onion, celery, and garlic until softened before adding the liquids helps build a complex taste profile. The tomato paste, beef stock, and whole tomatoes then create that signature rich tomato broth.
  • Spice It Up (or Down!): Ree's recipe includes a touch of cayenne for a subtle warmth. If you love a little extra kick, feel free to add more. For a milder soup, simply reduce or omit it. The dried parsley and oregano perfectly complement the savory meat and vegetables.

This hearty vegetable soup is designed to be a complete meal, but it pairs wonderfully with a few simple sides. Serve it with a crusty baguette for dipping, fluffy cornbread, or a fresh side salad to complete your cozy dinner experience. It's truly a recipe that delivers big on flavor with minimal fuss, making it a go-to for delicious, wholesome meals.
