How to Make Cookies from Cake Mix

Preheat the oven to 350°F. Line one or more baking sheets with parchment paper or silicone baking mats.

In a mixing bowl, empty the entire box of cake mix. Add 1/3 cup of vegetable oil and 2 large eggs to the cake mix. Use a hand mixer or a spoon to thoroughly mix the cake mix, vegetable oil, and eggs together until you have a well-combined cookie dough. The dough should be thick and slightly sticky.

Stir in any mix-ins. Use a cookie scoop to portion the dough into about 1.5-2 tablespoon balls. Place the cookie dough balls on the prepared baking sheets, leaving about 2-3 inches of space between each. Bake for 8 to 10 minutes or until the edges of the cookies are lightly golden brown. Be careful not to overbake; the cookies will continue to set as they cool. Pro tip: Roll into balls and refrigerate for 30 minutes before baking. This ensures the cookies won’t spread or get flat!
