    or any other small pasta shape, you’ll need about 3 cups cooked

    1 ⅓ c
  • pine nuts
    ⅓ c
  • extra-virgin olive oil
    ⅓ c
  • lemon juice

  • shallot

    finely chopped, about ½ cup

  • garlic

    pressed or minced

    rinsed and drained, or 1 ½ cups cooked chickpeas

  • grape or cherry tomatoes

  • feta cheese

    crumbled, about 1 cup

  • pitted and thinly sliced kalamata olives

  • zucchini

    sliced into super thin rounds

  • yellow squash

    sliced into super thin rounds

  • chopped fresh basil or flat-leaf parsley

Directions

    Cook the couscous until al dente, according to package directions. Drain off any excess water.
