
Million Dollar Chicken and Rice
Ingredients
- 2 tbspunsalted butter
- 1 csweet onion
from 1 medium [8 oz.] onion
- 1 ½ cchicken broth
- 1can condensed cream of onion soup
10.5-oz.
- 2 ozcream cheese
- ½ ccottage cheese
- ½ cFrench onion sour cream dip
- 1 ½ tbspsherry vinegar
- 1 tbspdry French onion soup mix
from 1 [1-oz.] pkg.
- 1 tspfresh thyme leaves
plus more leaves for garnish
- ½ tspblack pepper
- ½ tspkosher salt
- 4 ½ ccooked chicken
from 1 large whole rotisserie chicken
- 1 ¼ cquick-cooking rice
- 3 ozGruyère cheese
- 2 ozpre-shredded low-moisture whole milk mozzarella cheese
- 2 ccrispy fried onions

Preheat oven to 350°F. Melt butter in a 10-inch cast-iron skillet over medium heat. Add onion and cook, stirring occasionally, until softened and lightly browned, about 6 minutes. Remove from heat.

Stir together broth, soup, cream cheese, cottage cheese, French onion dip, vinegar, dry soup mix, thyme, pepper, and salt in a large bowl until smooth. Fold in chicken and rice. Transfer to skillet and stir to combine with onions. Cover with aluminum foil.

Bake in preheated oven until rice is tender, 35 minutes, uncovering after 20 minutes. Remove skillet from oven.

Preheat oven to broil. Sprinkle top with Gruyère and mozzarella cheeses. Top with crispy fried onions. Broil until cheese is melted and onions are golden brown, about 2 minutes. Garnish with thyme.
