This Olive Garden copycat minestrone soup is even better because it's a super easy crock pot recipe you can make at home, offering a hearty and comforting meal.

Ingredients

  • celery
    2 stalk
  • carrots
    4
  • zucchini
    1 large
  • onion
    1
  • garlic
  • fire roasted tomatoes
    2 can
  • white beans
    1 can
  • red kidney beans
    1 can
  • tomato paste
    1 ½ tbsp
  • salt
    3 tsp
  • black pepper
    2 tsp
  • basil
    2 tsp
  • bay leaves
    2
  • beef broth
    4 c
  • ditalini pasta
    2 c
  • spinach
    4 c

Directions

    In a large crock pot, add the chopped celery, carrots, zucchini, onion, and garlic.

    Add the fire roasted tomatoes, white beans, red kidney beans, tomato paste, salt, black pepper, dried basil, and bay leaves.

    Pour in 4 cups of beef broth. If you like your soup a little more soupy, you can add 6 cups.

    Cover and cook on low for about 5 to 6 hours, or until your vegetables are nice and tender.

    Once your veggies are tender, add in 2 cups of ditalini pasta and about 4 cups of spinach.

    Cover and cook for about another 20 minutes or until your pasta is done.
