
Mouthwatering Teriyaki Chicken Fried Rice Recipe

Cut the chicken breasts into 1-inch chunks and place them in a bowl. Pour the teriyaki sauce over the chicken and stir to coat evenly. Refrigerate for at least 1 hour, preferably up to 12 hours to allow the flavors to penetrate. While the chicken marinates, prepare all vegetables by finely chopping the onions, mincing the garlic, grating the ginger, dicing the carrots into 1/4-inch pieces, shredding the cabbage, and cutting the broccoli into small florets.

Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat until shimmering. Add the marinated chicken along with the sauce and cook for 4–5 minutes, stirring occasionally, until the chicken is cooked through and the sauce slightly reduces and caramelizes on the edges. The chicken should be opaque, well coated with sauce. Remove the chicken from the skillet and set aside to prevent overcooking.

Add the remaining 1 tablespoon of vegetable oil to the same skillet over medium-high heat. Add the chopped onions, minced garlic, and grated ginger. Stir frequently for 2–3 minutes until fragrant and onions turn translucent. Add the diced carrots, shredded cabbage, and broccoli florets, stirring constantly for about 1 minute until the vegetables begin to soften while retaining a slight crunch.

Push the cooked vegetables to the sides of the skillet to create a well in the center. Pour the beaten eggs into the empty space and let them cook undisturbed for about 15 seconds. Then gently scramble the eggs into small curds. Once eggs are nearly set but still moist, fold them together with the vegetables, mixing evenly in the pan.

Add the chilled day-old jasmine rice to the skillet, breaking up any clumps with a spoon or spatula while stirring. Return the cooked chicken and its sauce to the skillet. Pour in the soy sauce and sesame oil. Sprinkle with salt, black pepper, and red pepper flakes. Stir everything continuously for 2–3 minutes until the rice is heated through and all ingredients are well combined.

Taste the fried rice and adjust seasoning by adding more salt or soy sauce if needed. Divide the teriyaki chicken fried rice into serving bowls and serve immediately to enjoy the optimal texture and temperature.
