Old-Fashioned Creamy Lettuce Salad Recipe

Crisp iceberg lettuce topped with a sweet and tangy homemade creamy dressing and a chilled cucumber and red onion topper flavored with rice vinegar, dill, and celery salt.

Ingredients

  • very thinly shaved cucumber
    1 c
  • red onion
    1 small
  • rice vinegar
    2 tbsp
  • granulated sugar
    ½ tbsp
  • dill

    or

    2 tsp
  • celery salt

    or

    1 tsp
  • Black pepper
  • mayonnaise
    ⅓ c
  • milk

    plus more

    2 tbsp
  • apple cider vinegar
    1 ½ tbsp
  • granulated sugar
    1 tbsp
  • salt
    ½ tsp
  • Black pepper
  • head iceberg lettuce

    cleaned

    1 large
  • Freshly cracked black pepper
  • Cucumber and red onion topper
  • Creamy dressing

Directions

    Use a vegetable peeler to shave the cucumber into very thin ribbons or slices. You can also use a mandoline or carefully slice it very thin with a sharp knife.

    Add 1 to 2 cups of the shaved cucumber to a container along with the thinly sliced red onion.

    Add the rice vinegar, sugar, dill, celery salt and black pepper.

    Toss everything together well.

    Cover and refrigerate for at least 1 hour and preferably a few hours.

    Stir occasionally while the vegetables marinate. Taste before serving and adjust the dill, celery salt, sugar or vinegar to your preference.

    Add the mayonnaise, milk, apple cider vinegar, sugar, salt and black pepper to a bowl.

    Whisk until completely smooth.

    If you want a thinner dressing, add a little more milk, one teaspoon at a time.

    Taste and adjust. Add a little more sugar for sweetness or vinegar for extra tang.

    Refrigerate until ready to serve.

    Place cold, crisp iceberg lettuce on each plate.

    Spoon the creamy dressing over the lettuce.

    Use a slotted spoon to add the marinated cucumber and red onion topper.

    Finish with plenty of freshly cracked black pepper.
