- 2heaped tbsp Tomato Paste
- ½ c120ml Dry Red Wine
- 1 c240ml Tomato Passata
- 1 c240ml Beef Stock
- ¼ cFresh Parsley
- 1 tbspFresh Thyme Leaves
- 2 smallor 1 large Bay Leaf
- ¾ tspSalt
- ½ tspSugar
- ½ tspCinnamon
- ¼ tspBlack Pepper
- 4oz / 120g Unsalted Butter
- 4oz / 120g Plain Flour
- 4 c1litre Milk
- ½ tspSalt
- ½ smallNutmeg
- ¼ tspWhite Pepper
- 1 c80g freshly grated Pecorino Romano
- 2Egg Yolks
- 2 c480ml Vegetable or Olive Oil
- 1.6lb / 750g Baking Potatoes
approx 2 large
- 1lb / 500g Zucchini/Courgettes
approx 2 medium
- 2lb / 1kg Eggplants/Aubergine
approx 4 smallish
- few pinches of Parsley & Pecorino
- Salt & Pepper
Directions

Heat olive oil in a skillet, sauté onion and garlic. Add beef, tomato paste, red wine, tomato passata, beef stock, herbs, spices. Simmer until thickened.

Melt butter, stir in flour, gradually add milk. Season with nutmeg, salt, pepper. Stir in cheese and egg yolks.

Fry potatoes, zucchini, and eggplant until golden. Season with salt and pepper.

Layer beef, veg, béchamel in a baking dish. Repeat layers. Top with remaining béchamel.
