- 120g red enchilada sauce
- 80g green chiles

- 800g 2% cottage cheese
- 100g 1/3 fat cream cheese
- 150g extra sharp cheddar cheese
- 30g cheddar powder
- 120g red enchilada sauce
- 150g milk
- Salt & pepper
- Optional: chopped cilantro
Directions
Prep & Roast

Dice onions and bell peppers.

Toss diced onions and peppers in the oven to roast.

Cook 672g pasta to 50% doneness (half the time recommended on the box).
Slow Cooker Main Cook

Add 32oz diced chicken breast, 120g red enchilada sauce, 80g green chiles, 14oz (400g) can fire roasted tomatoes, 2 tablespoons garlic purée, 2 tsp onion powder, 1 tablespoon salt, 1 tsp black pepper, and 1/2 tsp cayenne to the slow cooker.

Add the roasted diced onions and bell peppers to the slow cooker.

Cook on high for 2-3 hours or on low for 3-4 hours.
Blended Queso Sauce

In a blender, combine 800g 2% cottage cheese, 100g 1/3 fat cream cheese, 150g extra sharp cheddar cheese, 30g cheddar powder, 120g red enchilada sauce, and 150g milk.
