    In a saucepan over medium heat, combine the raspberries, 1 tablespoon sugar, and 1 teaspoon vanilla extract. Simmer for 5 to 8 minutes, stirring occasionally, until the mixture thickens. Remove from heat and strain through a fine sieve to remove the seeds. Set aside the smooth sauce.

    In a mixing bowl, beat the cream cheese and ⅓ cup sugar together until smooth and creamy. Add 1 large egg and ½ teaspoon vanilla extract, mixing until fully incorporated and creamy. Set aside.

    In a separate bowl, whisk together the flour, sifted Dutch-process cocoa powder, and salt ensuring they are well combined.

    In another bowl, combine the refined coconut oil (or neutral oil), 1 ½ cups sugar, and 1 tablespoon vanilla extract. Beat in the eggs one at a time, mixing well after each addition.
