
Rhubarb Bars Recipe
Ingredients
- 1 call-purpose flour
- ½ csugar
- ½ cbutter
room temperature
- 2 largeeggs
- 1 csugar
- ¼ cflour
- ¼ tspsalt

Preheat your oven to 350°F (175°C). Line the bottom of an 8×8-inch pan with parchment paper, making sure to bring the paper up the sides. This will make removing the bars easier after baking.

In a food processor, combine the crust ingredients (flour, sugar, and butter) and pulse until the mixture comes together into a crumbly dough. Press this mixture evenly into the prepared pan to form the crust. Bake it in the preheated oven for 15 minutes. Note that the crust will remain pale in color at this stage.

While the crust is baking, whisk together the eggs, sugar, flour, and salt in a bowl for about one minute, being careful not to overmix. Gently fold in the diced rhubarb until well combined.

Once the crust has finished its initial bake, pour the rhubarb filling evenly over the hot crust. Return the pan to the oven and bake for an additional 40 to 45 minutes, until the filling is set and lightly golden on top.

Allow the bars to cool completely in the pan. Use the parchment paper to lift the bars out. Cut into 16 squares and serve. These bars are delicious served chilled or at room temperature.
