Don’t let the strange name fool you, this Scottish potato and cabbage casserole couldn’t be easier, or tastier—you only need 4 basic ingredients to make it!

Ingredients

  • russet potatoes
    5 medium
  • kosher salt

    plus more

    1 tbsp
  • savoy cabbage
    10 oz
  • unsalted butter
    ½ c
  • ground black pepper

    plus more

    1 tsp
  • cheddar cheese
    ¾ c

Directions

  1. 1

    Preheat the oven to 350°F.

  2. 2

Place the potatoes in a large pot. Add enough cold water just to cover the potatoes, then add the salt. Cover and bring to a boil over medium-high heat. Once boiling, set a timer for 15 minutes. When the timer goes off, add the cabbage to the pot with the potatoes and let cook for another 8 minutes. At this point, the potatoes and cabbage should be soft but not mushy. Drain well in a colander, then add them back to the pot you boiled them in.

  3. 3

Add the butter to the pot with the vegetables and mash roughly. You’re not looking for a smooth mixture, you still want some chunks for texture. Season with salt and pepper to taste, then transfer to an 8-inch square baking dish (you can also use a 9-inch round baking dish).

  4. 4

Cover the entire surface with grated cheddar cheese, then bake until the top is golden brown, about 45 minutes. Let rest for 5 minutes before serving. Leftovers can be left to cool to room temperature, then covered or transferred to an airtight container and stored in the refrigerator for up to 3 days. To reheat, pop it by the portion in the microwave or transfer to an ovenproof baking dish, cover with foil, and bake at 350°F, until hot all the way through. Love the recipe? Making Your Rumbledethumps Shine

  • Perfect Potatoes: While russet potatoes are traditional and give a lovely fluffy texture, you can experiment with Yukon Gold for a creamier mash. Ensure they are cooked until fork-tender for the best 'rumbled' consistency.
  • Cabbage Choices: Savoy cabbage adds beautiful texture, but green cabbage works wonderfully too. Just make sure to thinly slice it so it wilts down nicely into the dish.
  • Cheesy Goodness: A sharp cheddar cheese is key to the authentic flavor, providing that tangy contrast to the earthy vegetables. Feel free to use a blend of cheddar and a touch of Gruyere or Parmesan for extra depth.
  • Delicious Variations: For a heartier meal, consider frying some chopped bacon or a finely diced onion and mixing it in before baking. A hint of nutmeg can also elevate the flavors beautifully.

This Scottish potato and cabbage casserole is incredibly versatile. It makes a fantastic vegetarian main course, offering a complete and satisfying meal on its own. Alternatively, serve it as an exquisite side dish alongside roasted meats like lamb or beef, grilled sausages, or even a simple pan-fried fish. It's truly comfort food at its finest, easy to make, and sure to please everyone at the table!
