  • cumin
    1 tsp
  • salt
    1 tsp
  • pepper
    1 tsp
  • Fresh chopped parsley/cilantro
  • Lavash/pita

Directions

  1. 1

Preheat oven to 400°F (205°C). Slice the tops off two garlic heads, drizzle with olive oil and salt, wrap in foil, & roast for 45–60 minutes until golden and soft. While the garlic roasts, prep the kefta.

  2. 2

Grate the onion, squeeze out all liquid with paper towel or cheesecloth (prevents watery kefta.) In a large bowl, combine beef, garlic, spices, parsley, cilantro (if using), and the grated onion. Mix with your hands for 2–3 minutes until sticky & well combined.

  3. 3

Spread onto the sheet pan in a 1/2-inch (1.25 cm) thick rectangle. With a knife, score into 1-inch strips (2.5 cm). Drizzle evenly with 4 tbsp olive oil. Bake for 12–15 minutes at 400°F, then broil 2–5 minutes until golden & crisp on top. Careful removing!

  4. 4

Toss onion, tomatoes, parsley, salt, pepper, sumac, & lemon juice in a bowl.

  5. 5

Squeeze roasted garlic cloves into a bowl, mash, mix with yogurt, lemon juice, tahini, water & spices. On lavash/pita: add sauce, kefta, & salad. Roll tight. Crisp the wrap in a lightly oiled skillet.

About this Recipe

Easy Sheet Pan Beef Kefta Wraps: Your New Weeknight Favorite!

Craving vibrant, exotic flavors without the usual fuss? Our Sheet Pan Beef Kefta Wraps recipe brings the bustling tastes of the Mediterranean right to your kitchen, all on a single sheet pan! This incredible dish features juicy, perfectly spiced beef kefta, a luxurious roasted garlic sauce, and a bright, zesty tomato and herb salad, making for an unforgettable meal that's surprisingly simple to prepare.

What makes this easy kefta recipe truly special is the harmony of its components. The kefta itself is a blend of lean ground beef, fragrant spices like smoked paprika, cumin, allspice, turmeric, and cinnamon, enhanced by fresh herbs and grated onion for ultimate moisture and flavor. Roasting the kefta on a sheet pan means minimal cleanup and maximum deliciousness, as the beef develops a beautiful crust while staying tender inside.

But the kefta is just one part of the magic! Our homemade roasted garlic sauce is a game-changer, combining creamy Greek yogurt and rich tahini with sweet, mellow roasted garlic and a zing of lemon. This sauce is the perfect counterpoint to the savory beef. Rounding out the wraps is a refreshing zesty tomato salad made with cherry tomatoes, red onion, fresh parsley, and a generous sprinkle of sumac, adding a tangy pop that brightens every bite.

Tips for Perfect Sheet Pan Kefta

  • Don't overmix the beef: Gentle mixing keeps the kefta tender.
  • Uniform size: Shape your kefta into similar sizes for even cooking on the sheet pan.
  • Customize your spice: Feel free to adjust the spice levels to your preference, adding a pinch of cayenne for extra heat if you like.

These beef kefta wraps are incredibly versatile. While fantastic in warm lavash or pita, they also make a wonderful Middle Eastern beef bowl over fluffy rice, or a lighter option served in crisp lettuce cups. Get ready to transform your dinner routine with this flavorful and convenient sheet pan marvel!
