Single Serve Chocolate Cake (Small Batch)
Ingredients
- 2 tbspneutral oil
like canola oil or vegetable oil
- 1 largeegg white
- ½ tspvanilla extract
- 2 tbspmilk
I used whole milk
- 3 tbspwhite granulated sugar
- ¼ call-purpose flour
- 1 ½ tbspnatural unsweetened cocoa powder
- ½ tspbaking powder
- ⅛ tspkosher salt
- 2 tbspunsalted butter
- ½ cpowdered sugar
add more to make frosting thicker
- 2 tbspcocoa powder
- 2 tspmilk
I used whole milk
- 1 pinchkosher salt
omit if using salted butter

Preheat the oven to 350°F and grease a large ramekin (see note) with butter or cooking spray. I like to also add a circle of parchment paper to the bottom for easier removal.

In a medium bowl, mix together the oil, egg white, vanilla, and milk with a fork to combine and it gets a little foamy from the egg white.

Mix in the sugar then fold in the flour, cocoa powder, baking powder, and salt until just combined.

Pour the batter into the greased ramekin.

Bake for 22-26 minutes until the cake is set on top, a toothpick comes out with just moist crumbs, and if you gently press the top of the cake it slightly bounces back.

While the cake cools, make the frosting. Stir together the butter and milk with a fork in a small bowl - it doesn’t need to be completely combined. Mix in the powdered sugar and cocoa powder. You can add more or less powdered sugar/milk to adjust the consistency.

Either pipe on the frosting or spoon it on top of the cooled cake and enjoy!
