
Smashed Big Mac Tacos
We've had these twice this week now and I'm all for them because they are so friggin easy and also a winner with the kiddos... 15 mins, done. And also, who doesn't love a big mac? Each taco comes in around 360cals and two of these fill me up for ages whilst I still hit almost half my daily protein in one sitting 🔥💪 Recipe below:
Makes 4 tacos:
400g 5% Minced beef
4 Light Red leicester slices
4 Small white tortillas
1 Romaine lettuce
Big Mac Sauce:
2 Tbsp Mayo
1 Tbsp Ketchup
1 Tbsp Diced pickles
1 Tbsp Pickle juice
1 Tsp Mustard
1 Tsp Smoked Paprika
1 Tsp Garlic Powder
Salt & Pepper
Method:
• Mix together in a bowl your big mac sauce ingredients and set aside. Heat up a frying pan with a few sprays of olive oil on medium heat.
• Chop up your Romaine lettuce in a mixing bowl and add 1 tbsp of your sauce to wet it.
• Roll up 4 balls of the minced beef (100g each) and smashed them onto the tortilla using your fingers. Season with salt and pepper and fry them face down in the pan for 3-4 minutes or until the beef is cooked.
• Flip the tortilla and place the cheese on top of the beef, cover with a lid for a few minutes to help the cheese melt and for the tortilla to go crispy.
• Once the cheese has melted and the bottom of the tortilla has crispened up, remove from the pan and fill with a spoonful of your big mac sauce, and a portion of lettuce and close it up to make your taco!
